they, in the name of making more profits, won't give you diced pork and water chestnut to make their 'siew mai', they evenwon't stick to the thirty.seventy ratio of fat to lean meat combination, and include evenbits of the pig's skin into the minced meat to make the 'siew mai'.
moreover, the skin used to wrap the meat is also of the cheapest quality, losing the original flavour in traditional 'siew mai'.

what to do? just have to prepare at home.
